Domaine Sylvian Pataille is located in Marsannay and has become a real reference in the field of natural viticulture in Burgundy. Sylvain has always been against the principles of standardised wine, seeking to obtain, through biodynamic methods, bottles that authentically reflect the terroir of origin. Sylvain's winemaking philosophy is entirely natural: indigenous yeasts, no chemicals and maximum fermentation temperatures of around 32°C. Winemaking is carried out in stainless steel and fibreglass before going into barrel, ageing is very slow and no sulphur is used. In this way Pataille gives life to authentic and pure wines.
MoreThe Sylvain Pataille Domaine was born in 1999 in the heart of French Burgundy from a cultivation of a scarce hectare to reach, today, 24 hectares between Chardonnay, Pinot Noir, Pinot Blanc and Pinot Gris for a total of 55,000 bottles a year.
Hired in 1997 by an enological laboratory of Boeune, Sylvaine Pataille has always been untied and contrary to the preconceptions of wine standardized by the use of chemical products during the cultivation and handling of wine, enhancing the importance of a product that was able to fully express the magical terroir that characterizes the AOC of Marsannay , in Burgundy.
Marsannay is a village of 1200 hectares mainly cultivated with vineyards of Pinot Noir and Chardonnay, at the center of which is the town of Marsannay la Cote , in the heart of the wines of Burgundy within walking distance of Dijon.
Marsannay's Burgundy wines get the Appellata in 1987 from Village AOC Marsannay and in the area is the only AOC Village to be able to produce wines of Burgundy reds, Burgundy white wines and Burgundy rosé wines .
Burgundy wines of Sylvain Pataille are biodynamic wines , in which the standardization of wines is completely removed in favor of a product in able to best express the power of the terroir that produces it through cultivation techniques of biodynamic , natural and organic grapes.
The Burgundy wines of Pataille are devoid of any chemical substance, both in the cultivation phase and in the vinification phase, using exclusively (and in small quantities) copper and sulfur.
These Burgundy wines have obtained the certification of organic wine only in 2016, because due to climate change and the greenhouse effect, Pataille < / strong> he more than once had to use substances prohibited by certification to save his vine cultivation from excessive and out of control heat.
Finally, being able to find the right balance and the correct cultivation techniques, I succeed in his intent by bringing the Domaine Sylvaine Pataille to be considered the jewel of the organic production of Burgundy wines of Marsannay.
We now find a capable and experienced producer of Burgundy wines , which expresses the completeness of a splendid terroir in wines with a controlled denomination such as the Bourgogne Aligotè, Marsannay Blanc, Marsannay Clos du Roy , Bourgogne Aligotè Clos Du Roy, Bourgogne Aligotè Champ Forey, Bourgogne Le Chapitre, Marsannay Chardonnay Rosé, Marsannay Le Longeroies and Bourgogne Aligotè Les Auvonnes Au Pepe.
